Makes about 1 ½ cups

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 Tablespoon  oil
  • Salt, to taste
  • Pepper, to taste

Directions:

  1. Preheat oven to 400 degrees.  While oven is preheating, rinse chickpeas and dry thoroughly with paper towels.  Allow chickpeas to air-dry while the oven finishes preheating.
  2. Coat chickpeas with oil, salt and pepper. Spread in a single layer on a baking sheet. 
  3. Bake for 30-35 minutes, until golden-brown and crispy, stirring once half-way through. Best enjoyed the day-of as a crunchy snack, but leftovers may be kept in the refrigerator for a few days.
