Makes about 1 ½ cups
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 Tablespoon oil
- Salt, to taste
- Pepper, to taste
Directions:
- Preheat oven to 400 degrees. While oven is preheating, rinse chickpeas and dry thoroughly with paper towels. Allow chickpeas to air-dry while the oven finishes preheating.
- Coat chickpeas with oil, salt and pepper. Spread in a single layer on a baking sheet.
- Bake for 30-35 minutes, until golden-brown and crispy, stirring once half-way through. Best enjoyed the day-of as a crunchy snack, but leftovers may be kept in the refrigerator for a few days.
